Recipe : Balsamic Roasted Vegetables

Ingredients:

  • 4-6 cups assorted vegetables (I’ve used combination of carrots, onions, cauliflower, mushrooms)

  • 4 tbsp of balsamic vinegar

  • 1 tbsp of dried Italian seasoning or dried oregano, basil and rosemary

  • Salt and pepper

  • Oil (Spray)


Instructions:

  1. Pre-heat oven to 425ºF and line a roasting pan with parchment paper.

  2. Toss the vegetables into oil, vinegar, seasonings/spices.

  3. Spread on a single layer on a sheet pan and roast for 20-30 mins.

  4. Tossing and flipping them over about halfway through, or until veggies are tender.
