Recipe : Pan Grilled Yellow Squash with Dill Vinaigrette

Ingredients:

  • 2 medium size yellow squash

  • 1 tsp Dijon mustard

  • ½ tsp of stevia

  • 2 tbsp of apple cider

  • 2 tbsp chopped fresh dill

  • Oil (Spray)

  • ½ tsp onion powder

  • Salt and pepper


Instructions:

  1. In a medium bowl, mix all ingredients except for yellow squash, set aside.

  2. Cut squash in half, crosswise and slice lengthwise into 3-4 pcs then add it all to the bowl of vinaigrette.

  3. Toss to coat, marinate for 15-30 mins.

  4. Heat pan (griddle) and oil. 

  5. Remove squash from marinade and grill over medium-high heat for a couple minutes each side or until chargrilled marks appear and squash is just tender.

  6. Serve immediately.
